This past weekend, as mentioned before, was Ben and my one year anniversary! We had a wonderful day celebrating our first year of marriage but this weekend is the fun away time 🙂
We are traveling by boat to an island unknown (well known to a few of you) and the camp out is about to begin! The list has been made,
the plans have been set and the excitement is brewing! I can’t wait to come back and share the adventures but not as much as I can’t wait to get there and have a weekend of exploration with my Ben.
While I am waiting for the morning I am cooking up one of my absolute favourite vegetarian recipes…quinoa! All you who have not tasted it are missing out greatly! It is actually a seed that has a slighty crunchy and mild nutty flavouring. I am currently cooking 2 cups of it in 2 1/2 cups of water (2 veggie stock cubes added also). Bring it all to the boil and simmer for 12 minutes. Then I shall let it stand for 5 minutes while the rest of the water is absorbed and ending it all off by mixing in the peppers, onions, garlic and mushrooms that are being stir fried up beside it. This batch will keep me going for a week of extremely high in protein late night snacks! Hello Jimmy Fallon!
Ben keeps looking over with hunger in his eyes proclaiming “it smells great! i love that you love garlic!” haha, we were made for each other.
MMMMMMM! Well time to go mix it all together!
